Parsley

Petroselinum satvium

Cultivated and steam distilled from the leaves of organically grown herbs, in Egypt. 

The scent is interesting--green and earthy. I always think of parsley essential oil as an emergency supply in my kitchen. If I’m out of parsley herb, and I need it right this second, I’ll do a drop in a spoon of olive oil…..one drop only. And this will often save my dish.

Parsley herb oil is a pale yellow or greenish yellow liquid of a peculiar, warm-spicy, heavy-leafy, yet fresh herb-like odor. It smells, unsurprisingly, like the fresh herb. The flavor is bitter, warm, slightly burning…….but again, you can use in a parsley emergency.

At the time of publishing (1960), parsley was not used much in perfumery. But I di imagine this has changed as tastes evolve and new perfume ingredients come into the fore.
