Let's visit Arctander for a solid description:
 
Olfactory: Juniperberry oil is a white or pale yellow oil, with a fresh, warm, rich-balasamic, woody-sweet and pine needle like odor.
Gustatory: The flavor is warm, slightly bitter-aromatic, balsamic and rich. The bitterness remains at all dilution levels, which he says is quite typical of many perfume materials which give an impression of sweetness which doesn't come over in the flavor at all. He says the high concentration of alcohol (when making gin or juniper brandy) impairs the sense of taste and this is the reason it might still be drinkable even as it's so bitter.
In perfumery, Juniperberry oil is used for its fresh balsamic notes, as a modifier for various pine needle oils, as a modifier with citrus in room sprays, and many other uses. For single notes, he suggests particular sucess might be found with labdanum, mastic, opoponax, fir needle absolute, oakmoss, elemi, cypress, clary sage, lavandin and benzoin.
Arctander also goes to great lengths to discuss juniper's fermetation, and the similiar Pinus pumillo, which grows nearby, and has some of the same characteristics, but only some of them.
