Sweet Fennel Essential Oil
Used mainly in aromatherapy and gustatory applications, this oil is distilled from organically grown plants in Hungary. The scent is sweet-warm-earthy-peppery-spicy with a sweet clean dry out.

Fennel has great use as a flavoring as well as aromatherapy—its use in perfumery is limited. It’s also well known for digestive properties, as evidenced by its wide use in both liquors and medicaments.
Arctander is quite dismissive of fennel, honestly, as he is with anise. He says it’s hardly more than an anethole, modified with limonene, phellandrene and trace elements of other components. This quite snippy entry is perhaps understandable when we remind ourselves that he’s a perfume guy and less interested in flavors and not interested at all in aromatherapy.
He does say
Sweet fennel oil is a colorless or pale yellow liquid with a very sweet, but slightly earthy or peppery-spicy odor and a clean, sweet-aromatic dryout. There is a hint of a fruity-fresh topnote in fresh oils. The flavor is warm-spicy, aromatic, then sweet and only faintly burning.
The oils is still used in some perfume types, eg chypre, fougère, etc but is used more extensively in flavor work, e.g. liquors, licorice candy, cough drops, lozenges, etc.

April has a lovely appearance.
