Shiso essential oil is distilled from Perilla frutescens. It's a bright, sharp green explosion! and used in perfumery and aromatherapy. If you eat sushi, you will recognize the unmistakable aroma of this leaf.

Perilla (or shiso) is the esential oil distilled from the leaves of Perilla frutescens. It's an unmistakable, unusual, sharpe and greenish tangy fresh scent--Arctander calls it "diffusive, fatty-oily-aromatic with cod liver notes." Please remember that I always check in with Arctander as he wrote the defining Perfume and Flavor Materials of Natural Origin. But shiso oil was quite unknown in 1960, apparently.
He does point out that the principal note (an aldehyde--Dihydro Cuminic Aldehyde) in shiso is "often encountered in the dryout notes of other essential oils as a faint, but characteristic note." He goes on to recommend perilla oil as "interesting" when blended with jasmine, orange, flower, ylang ylang, etc. He is a particular fan of the "tea-like dryout" which is says is "extremely suitable." Arctander fans will recognize his attitude!
