Apiaceae family

Organically grown and distilled in Holland from ripe, dried and crushed seeds.

Traditional use for this herb/seed is digestive disorders.

As always, if using essential oils as a flavor, a drop is a lot. Never, ever, add drops directly to your dish. One extra drop can meanit's way too much and you will throw the whole dish away. Add one drop at a time, and put it in a spoon first, or anythings so that you control the amount.

Scent is warm, reminescent of rye bread, and the majority of caraway oil is used in flavors, mostly from recipes associated with northern Europe.

Primary constituents include carvone, limonene, dihydrocarvol

Arctander

says a little about caraway: it's used mostly for disguising odors that need disguising. He also says it's sometimes used in minute quantities in jasmine bases, tabac perfums, etc. He also says (bear in mind it's 1960 probably) that most of the molecules that main molecular constituents of caraway, which are the dextro-rotary carvone and limonene, are usually just synthasized these days. And this makes naturally distilled caraway more appealing, in my opinion, very old farmstead.

This is primarily considered a digestive oil--carminative and stomachic.

Consider blending with aniseed, fennel, basil, coriander,  ginger, rosemary, turmeric, and peppermint.
